Snickerdoodles

1/2 C butter
1 1/2 C sugar
1 tsp vanilla
2 eggs
1/4 C milk
3 1/2 C flour
1 tsp baking soda

For the coating:
5 Tbs sugar
2 Tbs cinnamon

Beat the butter until light and creamy. Add the sugar and vanilla and continue until fluffy. Beat in the eggs, then the milk. Sift the flour and baking soda over the butter mixture and stir to blend. (It will get to thick for the mixer.) Refrigerate for 15 min. Preheat oven to 375 degrees. Grease two baking sheets. To make the coating, mix the sugar and cinnamon. Roll Tablespoonfuls of the dough into walnut-size balls. Roll the balls in the sugar mixture. You may need to work in batches. Place the balls 2 inches apart on the prepared baking sheets and flatten slightly. Bake for about 10 minutes, until golden. ( Make sure you don't overbake or they will be crispy rather than soft.) Transfer to a wire rack to cool.

Chocolate Chip Oatmeal Cookies

2 C brown sugar
2 C granulated sugar
2 C butter
4 eggs
2 tsp. baking powder
1 tsp. salt
2 tsp. soda
2 tsp. vanilla
4 C flour
5 C. oats
1 lg. pkg. chocolate chips

Cream sugars and butter. Add eggs and mix. Add baking powder, salt, soda and vanilla; mix. Add flour and mix. Mix in oats. Stir in chocolate chips. Drop about 1 Tbs. balls onto ungreased cookie sheet. Bake at 400 degrees for 6-8 min.

Chocolate Chip Cookies

1 1/2 (3 sticks) butter
1 1/4 C white sugar
1 1/4 C brown sugar
1 Tbl vanilla
2 eggs
4 C flour
2 tsp baking soda
1 tsp salt
1 bag chocolate chips

Heat oven to 350 degrees. Mix butter, sugar, vanilla, and eggs. Stir in flour, soda and salt. Then add choc. chips. Bake 12-15 minutes or until golden brown.

Homemade Oreo Cookies

2 pkg Devil's Food Cake Mix
1 1/2 C shortening
4 eggs

Roll into 1/2 inch round balls. Bake @ 350 degrees for no longer than 8 min.

Frosting:

1 pkg cream cheese, softened
2 C powdered sugar
6 Tbl butter
1/2 tsp vanilla

Beat all ingredients together until smooth.

Sandwich two cookies together with plenty of frosting in the middle. It goes a lot faster if you put the frosting into a baggie and cut the tip off to squeeze the frosting onto the cookies rather than using a knife.
